THE MENU

Our menu includes a grilled selection of high-grade meats as well our signature flown-in live Boston lobsters, amongst other fresh seafood offerings.

Using fresh seafood and quality meat cuts, coupled with minimal seasoning and modern cooking techniques, the dishes highlight the beauty and freshness of the produce.

The Chef
CHEF JUN

Leaving his Malaysian hometown at a young age, Chef Jun was first exposed to the world of food and beverage upon his arrival in Singapore. Having his first job as a culinary apprentice, he soon fell in love with the business and decided to embark on his career path as a chef.

With an affinity to classic French cooking and Marco Pierre White as his inspiration, Chef Jun honed his skills working at several French establishments in Singapore, mastering various regional French cuisines. Coincidentally, Chef Jun is also no stranger to Unlisted Collection having worked in the past at The Market Grill at the start of his career.

He believes in allowing ingredients to shine without over seasoning and loves cooking large cuts intended for sharing. Through perseverance and hard work, Chef Jun has risen through the ranks to become Head Chef, bringing with him a strong motivation in developing new dishes to ensure that the bistro concept stays relevant to current trends.

THE INTERIOR

Drawing inspiration from a combination of old-style traditional butcheries and whimsical diners, the restaurant boasts a cosy environment with industrial style finishes with vintage posters, large antique mirror with a hand-drawn butcher chart. A 1.5m long tank with live lobsters and oysters takes centre stage as the key focal point of the restaurant.
